Ingredients

  • 1 lb mixed mushrooms (cremini and shiitake)
  • 2 medium firm apples (Honeycrisp or Granny Smith)
  • 1 lb boneless chicken thighs
  • 1 medium yellow onion
  • 4 garlic cloves
  • 6 fresh thyme sprigs
  • 2 sprigs fresh rosemary
  • 8 fresh sage leaves
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 1/2 cup apple cider
  • 1/2 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 1/2 tsp kosher salt
  • 3/4 tsp black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. 1Pat the chicken thighs dry and season both sides generously with salt and pepper. Heat a large 12-inch skillet over medium-high heat and add olive oil until it shimmers.
  2. 2Place the chicken skin-side or presentation-side down and sear without moving for 5 to 6 minutes until deeply golden. Flip and cook another 4 minutes, then transfer to a plate; it will finish later.
  3. 3Add the butter to the same skillet. Once melted and foaming, tip in the sliced mushrooms in a single layer as much as possible. Let them sear undisturbed for 3 to 4 minutes until the edges brown and moisture releases.
  4. 4Stir the mushrooms, then add the sliced onion. Cook 4 to 5 minutes, stirring occasionally, until the onion softens and turns translucent and the mushrooms deepen in color.
  5. 5Add the minced garlic, thyme sprigs, rosemary, and torn sage. Stir constantly for about 45 seconds until the herbs smell fragrant and the garlic is just golden, not burned.
  6. 6Tuck the apple wedges into the pan among the mushrooms. Pour in the apple cider and broth, then stir in the Dijon. Scrape up any browned bits from the bottom of the skillet.
  7. 7Nestle the seared chicken back into the skillet, spooning some pan juices over the top. Reduce heat to medium-low, cover, and simmer 12 to 14 minutes until the chicken reaches 165°F internally and the apples are tender but still hold shape.
  8. 8Uncover, raise heat slightly, and let the sauce reduce 2 to 3 minutes until it lightly coats a spoon. Taste and adjust salt and pepper.
  9. 9Remove the woody herb stems. Scatter chopped parsley over everything, give one gentle toss, and serve straight from the skillet while hot.
