Ingredients

  • 1.5 lb ground beef
  • 1/2 lb ground pork
  • 1 small, finely diced onion
  • 3 cloves, minced garlic
  • 3/4 cup breadcrumbs
  • 1/3 cup milk
  • 1 large egg
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1.25 tsp salt
  • 3/4 tsp black pepper
  • 3 cups frozen peas and carrots
  • 2 tbsp butter
  • 4 cups prepared mashed potatoes
  • 1.5 cups prepared gravy mix or leftover brown gravy

Instructions

  1. 1Preheat the oven to 375°F. In a large bowl, soak the breadcrumbs in milk for 2 minutes. Add the ground beef, ground pork, diced onion, garlic, egg, half the ketchup, Worcestershire sauce, salt, and black pepper.
  2. 2Mix gently until just combined; avoid overworking. Shape into a free-form loaf about 9 by 5 inches on a parchment-lined rimmed baking sheet or in a loaf pan.
  3. 3Stir the remaining ketchup with brown sugar and Dijon mustard. Spread this glaze evenly over the top and sides of the meatloaf.
  4. 4Bake 45 to 55 minutes until the internal temperature reaches 160°F and the glaze is caramelized and sticky. Rest the loaf 10 minutes before slicing.
  5. 5While the meatloaf rests, warm the mashed potatoes until piping hot. Prepare the gravy according to package directions or reheat homemade gravy until smooth and pourable.
  6. 6In a skillet, melt the butter over medium heat, add the frozen peas and carrots, and cook 5 to 6 minutes until hot and glossy; season lightly.
  7. 7Slice the meatloaf into 6 thick portions. For each TV-dinner plate, place a slice in the main compartment and spoon gravy over the top.
  8. 8Add a generous scoop of mashed potatoes in the second section and the buttered peas and carrots in the third, keeping the classic three-compartment look.
  9. 9Serve right away with extra gravy on the side so diners can recreate that saucy frozen-dinner bite at home.
