Loaded Bacon-Wrapped Jalapeño Poppers

Bacon-wrapped jalapeño poppers grew out of Tex-Mex bar snacks, where heat meets cool creaminess. Fresh peppers get stuffed with cheddar-laced cream cheese and crumbled bacon, then snugly wrapped in thin strips until crisp.

Ingredients

  • 12 fresh jalapeños
  • 8 oz cream cheese
  • 1 cup shredded sharp cheddar
  • 1/2 cup shredded Monterey Jack
  • 1/4 cup cooked crumbled bacon
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 12 thin-cut bacon strips
  • 24 toothpicks
  • 1 tbsp olive oil spray
  • 2 tbsp chopped green onions
  • 1/2 cup ranch or blue cheese dressing

Instructions

  1. 1Preheat the oven to 400°F and line a rimmed baking sheet with foil topped with a wire rack so fat can drip away while the bacon crisps.
  2. 2Slice each jalapeño in half lengthwise and scrape out the seeds and membranes with a small spoon for milder heat; leave a few seeds if you want extra kick.
  3. 3In a bowl, beat the softened cream cheese until smooth, then fold in both shredded cheeses, the crumbled bacon, garlic powder, and smoked paprika until evenly combined and scoopable.
  4. 4Fill each jalapeño half generously with the cheese mixture, mounding it slightly above the rim so it will melt and bubble.
  5. 5Wrap every stuffed half with one full strip of thin-cut bacon, starting at the stem end and spiraling toward the tip so the filling is fully enclosed; secure the ends with toothpicks.
  6. 6Arrange the wrapped poppers seam-side down on the prepared rack, mist lightly with oil spray, and bake for 22–28 minutes until the bacon is deeply browned and crisp and the cheese is molten and starting to ooze.
  7. 7For extra-crispy bacon, switch the oven to broil for the final 1–2 minutes, watching closely so nothing burns.
  8. 8Rest the poppers 3 minutes on the rack so the cheese sets just enough to stay gooey without running everywhere, then snip and remove the toothpicks.
  9. 9Transfer to a platter, shower with chopped green onions, and serve hot with cool ranch or blue cheese dressing on the side so the smoky bacon fat and spicy cheese contrast with every dip.
