  • 4 bone-in skin-on chicken thighs
  • 2 cups cherry tomatoes
  • 2 ripe Roma tomatoes
  • 1 medium yellow squash
  • 3 fresh rosemary sprigs
  • 2 tbsp fresh oregano leaves
  • 4 garlic cloves
  • 3 tbsp extra-virgin olive oil
  • 1.5 tsp kosher salt
  • 3/4 tsp black pepper
  • 1 lemon
  • 1/4 cup fresh parsley

Instructions

  1. 1Pat the chicken thighs very dry with paper towels and season generously all over with salt and pepper. Let them sit at room temperature 10 minutes while you prep the produce.
  2. 2Halve the cherry tomatoes, cut the Roma tomatoes into thick wedges, and slice the yellow squash into 1/2-inch rounds. Smash the garlic cloves and strip the rosemary leaves from two sprigs.
  3. 3Heat a large 12-inch oven-safe skillet over medium-high heat and add olive oil until shimmering. Place the chicken skin-side down and sear undisturbed 6 to 8 minutes until the skin is deep golden and crisp.
  4. 4Flip the chicken, tuck the smashed garlic and remaining rosemary sprig the pieces, and cook 2 minutes more. Preheat the oven to 425°F during this step.
  5. 5Scatter the cherry tomatoes, Roma wedges, and squash the chicken. Sprinkle with oregano, a pinch more salt, and a squeeze of lemon juice.
  6. 6Transfer the skillet to the oven and roast 18 to 22 minutes until the chicken reaches 165°F internally and the tomatoes have burst into a bright, juicy sauce.
  7. 7Remove from the oven and let rest 5 minutes so the juices redistribute. The squash should be tender but still hold its shape.
  8. 8Chop the fresh parsley and scatter it over everything along with lemon zest. Spoon the pan juices and roasted tomatoes over each portion when plating.
