Ingredients
- 2 lb bone-in skin-on chicken thighs
- 1 medium (about 2 lb) butternut squash
- 2 large Honeycrisp apples
- 1 medium red onion
- 3 tbsp olive oil
- 2 tbsp chopped fresh rosemary
- 1 tbsp fresh thyme leaves
- 4 minced garlic cloves
- 1 lemon
- 1½ tsp kosher salt
- ¾ tsp black pepper
- 1 tsp smoked paprika
- ¼ cup chopped fresh parsley
Instructions
- 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment for easy cleanup.
- 2Pat the chicken thighs very dry with paper towels so the skin can crisp; season both sides generously with salt, pepper, and smoked paprika.
- 3Peel the butternut squash, scoop out the seeds, and cut into 1-inch cubes. Core the apples and cut into thick wedges, leaving the skin on for color and structure. Slice the red onion into sturdy wedges.
- 4In a large bowl toss the squash, apples, and onion with olive oil, minced garlic, chopped rosemary, thyme, salt, and several grinds of pepper until everything is lightly coated and fragrant.
- 5Spread the vegetables and fruit in a single layer on the prepared pan, then nestle the seasoned chicken thighs skin-side up among them so the pieces have a little space.
- 6Roast for 35 to 40 minutes, rotating the pan halfway, until the chicken skin is deep golden and crisp, the internal temperature reaches 165°F, and the squash is tender and caramelized at the edges.
- 7While the pan rests for 5 minutes, zest the lemon over the chicken and vegetables, then squeeze the juice across everything to brighten the roasted flavors.
- 8Scatter the fresh parsley over the top, baste the chicken lightly with the pan juices, and serve family-style straight from the sheet pan while still hot.
