Ingredients
- 1 lb Italian sausage links
- 12 oz pizza dough
- 1 pint cherry tomatoes
- 8 oz fresh mozzarella balls
- 2 medium bell peppers
- 1 medium red onion
- 3/4 cup pizza sauce
- 3 tbsp olive oil
- 1.5 tsp Italian seasoning
- 1 tsp garlic powder
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves
- 8 wooden or metal skewers
Instructions
- 1If using wooden skewers, soak them in water for 30 minutes so they do not burn. Preheat a gas or charcoal grill to medium-high heat, about 400°F, and oil the grates lightly.
- 2Slice the sausage links into 1-inch rounds. Cut the bell peppers and red onion into 1-inch chunks. Pat the mozzarella balls dry.
- 3On a floured surface, stretch the pizza dough and cut it into roughly 1-inch pieces or small squares. Toss the dough pieces lightly with a little olive oil so they do not stick.
- 4Thread the skewers by alternating sausage rounds, dough pieces, cherry tomatoes, mozzarella balls, pepper chunks, and onion pieces, packing them snugly but not crushed. Aim for even distribution of sausage and dough on every skewer.
- 5In a small bowl, whisk the remaining olive oil with Italian seasoning, garlic powder, salt, and pepper. Brush the assembled skewers generously on all sides with this mixture.
- 6Place the skewers on the hot grill. Cook, turning every 2 to 3 minutes, until the sausage is cooked through with grill marks, the dough is puffed and golden with charred spots, and the vegetables are tender-crisp, 10 to 14 minutes total.
- 7During the last 2 minutes, brush the skewers lightly with pizza sauce so it warms and clings without burning. Watch closely so the cheese does not melt completely off.
- 8Transfer the skewers to a platter. Sprinkle immediately with Parmesan and torn basil leaves while still hot.
- 9Serve the skewers family-style with extra warmed pizza sauce on the side for dipping, keeping the sausage-pizza flavors front and center.
