Ingredients

  • 4 (6–7 oz each) boneless skin-on pheasant breasts
  • 1.25 tsp kosher salt
  • 3/4 tsp black pepper
  • 1 tsp minced fresh rosemary
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1, minced shallot
  • 3/4 cup ruby port
  • 1/2 cup chicken stock
  • 1/2 cup whole-berry cranberry sauce
  • 1 tbsp brown sugar
  • 1 tsp balsamic vinegar
  • 1/2 tsp orange zest
  • 1/4 cup (optional garnish) fresh cranberries
  • 1 tbsp chopped parsley

Instructions

  1. 1Pat the pheasant breasts dry. Season both sides with salt, pepper, and minced rosemary, pressing the herbs gently into the meat. Let sit at room temperature 15 minutes while you prep the glaze ingredients.
  2. 2Heat a large oven-safe skillet over medium-high heat. Add olive oil and one tablespoon of the butter. When the fat shimmers, place the breasts skin-side down.
  3. 3Sear without moving until the skin is deep golden and crisp, 4 to 5 minutes. Flip and sear the second side 2 minutes more.
  4. 4Transfer the skillet to a preheated 375°F oven. Roast until the thickest part of each breast reaches 155–160°F, about 8 to 12 minutes depending on thickness.
  5. 5Move the cooked breasts to a warm plate and tent loosely with foil to rest. Pour off all but one tablespoon of fat from the skillet.
  6. 6Return the skillet to medium heat. Add the remaining butter and the shallot; cook until the shallot softens and smells sweet, about 2 minutes.
  7. 7Pour in the port and stock. Simmer, scraping the fond, until the liquid reduces by roughly half and looks syrupy, 4 to 6 minutes.
  8. 8Stir in the cranberry sauce, brown sugar, balsamic, and orange zest. Cook 2 to 3 minutes more until the glaze is glossy, coats the back of a spoon, and tastes bright-savory.
  9. 9Nestle the rested pheasant breasts back into the pan and spoon the hot glaze over them so every piece is lacquered. Warm 1 minute.
  10. 10Plate each breast, spoon extra cranberry-port glaze over and around, and finish with optional fresh cranberries and parsley. Serve at once while the skin stays crisp.
