Ingredients
- 4 (about 1.5 lb total) cube steaks
- 1 cup buttermilk
- 1.75 cups all-purpose flour
- 2 tsp kosher salt
- 1.5 tsp black pepper
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
- 2 large yellow onions
- 4 tbsp butter
- 1.5 cups neutral oil for frying
- 2 cups beef broth
- 1 cup whole milk
- 1 tsp Worcestershire sauce
- 1 tsp fresh thyme leaves
- 2 tbsp chopped fresh parsley
Instructions
- 1Slice the onions into thin half-moons. Melt half the butter in a large skillet over medium heat, add the onions with salt, and cook slowly, stirring often, until deep golden and sweet, about 20 to 25 minutes. Set the caramelized onions aside in a bowl.
- 2While the onions cook, pat the cube steaks dry and season both sides with salt and pepper. Soak them in buttermilk in a shallow dish for 15 minutes.
- 3Whisk the flour with the remaining salt, black pepper, garlic powder, and cayenne in a wide bowl. Reserve three tablespoons of this seasoned flour in a small dish for the gravy later.
- 4Heat the oil in a heavy 12-inch cast-iron skillet to 350°F. Dredge each buttermilk-soaked steak thoroughly in the seasoned flour, pressing so the coating adheres, then rest briefly on a rack.
- 5Fry the steaks in batches without crowding, 3 to 4 minutes per side, until the crust is mahogany-crisp and the meat is cooked through. Move finished steaks to a warm platter in a low oven.
- 6Carefully pour off all but three tablespoons of the frying fat from the skillet, leaving the browned bits. Add the remaining butter and the reserved seasoned flour; whisk over medium heat for 1 minute until the roux smells toasty and turns light golden.
- 7Slowly whisk in the beef broth, then the milk and Worcestershire, scraping up every fond bit. Simmer 4 to 5 minutes until the gravy thickens enough to coat a spoon; taste and adjust salt and pepper. Stir in the thyme.
- 8Nestle the hot chicken fried steaks back into the skillet or arrange on a serving platter. Smother each piece with the caramelized onions, then ladle the peppery gravy generously over the top so it seeps into the crispy edges.
- 9Scatter chopped parsley over everything and serve at once, making sure every plate gets plenty of onion and gravy so the signature crust stays the star under the rich blanket.
