Ingredients

  • 3 cups cooked shredded rotisserie chicken
  • 2 medium crisp apple (Honeycrisp or Gala)
  • 1 1/2 cups red seedless grapes
  • 3 celery stalks
  • 1/2 cup toasted walnuts
  • 3 tbsp chopped fresh dill
  • 2 tbsp chopped fresh parsley
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 head butter lettuce leaves
  • for serving crusty bread or rolls

Instructions

  1. 1Shred or chop the rotisserie chicken into bite-size pieces and place it in a large mixing bowl, discarding any excess skin if you prefer a lighter salad.
  2. 2Core the apples and cut them into thin matchsticks or small dice, leaving the skin on for color and crunch. Halve the grapes and thinly slice the celery on the bias.
  3. 3Add the apple, grapes, celery, toasted walnuts, dill, and parsley to the chicken. Toss gently so the fruit and herbs are evenly distributed without crushing the grapes.
  4. 4In a separate small bowl, whisk the Greek yogurt, mayonnaise, Dijon, apple cider vinegar, honey, salt, and pepper until smooth and creamy. Taste and adjust seasoning so the dressing is bright and lightly sweet.
  5. 5Pour the dressing over the chicken mixture. Fold everything together with a spatula until every piece is lightly coated; the salad should look glossy but not soupy.
  6. 6Chill the finished salad in the refrigerator for 15 to 20 minutes so the flavors meld and the apples stay crisp. Meanwhile, separate and rinse the butter lettuce leaves and pat them dry.
  7. 7To serve for a weekend gathering, spoon the chicken salad into a wide shallow bowl or onto a platter lined with the butter lettuce cups so guests can scoop individual portions.
  8. 8Set out crusty bread or soft rolls alongside so everyone can build open-faced sandwiches or lettuce wraps. Garnish the top with a final sprinkle of dill and a few extra grape halves right before serving.
