Ingredients
- 1 1/2 cups all-purpose flour
- 4 large eggs
- 1 1/2 cups whole milk
- 1 1/2 tsp kosher salt
- 1 tsp black pepper
- 1 lb cremini mushrooms
- 1 medium yellow onion
- 6 fresh thyme sprigs
- 3 garlic cloves
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 1/2 cup vegetable or beef broth
- 1 cup grated Gruyère or sharp cheddar
- 3 tbsp vegetable oil for the pan
Instructions
- 1Slice the mushrooms and dice the onion. Heat olive oil and half the butter in a large skillet over medium-high heat. Add mushrooms in a single layer and cook undisturbed until deeply browned on one side, about 4 minutes, then stir and continue until golden and their liquid evaporates.
- 2Add onion, minced garlic, leaves from most of the thyme sprigs, salt, and pepper. Cook until the onion softens and everything smells rich, about 5 more minutes. Splash in the broth to deglaze, scraping up browned bits, then remove from heat and stir in the remaining butter.
- 3Whisk flour, eggs, milk, remaining salt, and pepper into a smooth batter. Rest 10 minutes while the oven preheats.
- 4Preheat oven to 425°F. Pour the oil into a 9-by-13-inch metal baking dish and heat in the oven until smoking hot, 8 to 10 minutes.
- 5Carefully remove the hot dish. Scatter the mushroom-thyme mixture evenly across the bottom, then pour the batter over the top in one steady stream. Sprinkle cheese evenly over the surface.
- 6Bake 25 to 30 minutes without opening the door until the casserole is dramatically puffed the edges, golden-brown, and set in the center with crispy peaks.
- 7Let the casserole rest 5 minutes so the custardy middle firms slightly while the crust stays crackling. Garnish with the last fresh thyme leaves.
- 8Cut into squares and serve immediately so every portion shows the risen Yorkshire rim cradling the savory mushroom filling—the pudding is unmistakably the hero carrying the earthy thyme flavors.
