Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp fine sea salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup unsalted butter, melted and cooled
  • 1/2 cup wildflower honey
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp pure vanilla extract
  • 1 tsp fresh lemon zest
  • 3 tbsp extra honey for glazing
  • 1 tbsp edible flower petals or dried lavender buds

Instructions

  1. 1Preheat the oven to 350°F and generously butter a standard 6-cup muffin tin or six small ramekins so each cake releases like a whispered secret. Whisk the flour, baking powder, sea salt, and cinnamon in a medium bowl until evenly flecked with spice.
  2. 2In a larger bowl, whisk the melted butter, wildflower honey, and sugar until the mixture turns glossy and pale gold. Add the eggs one at a time, beating well after each so the batter becomes silky.
  3. 3Stir in the milk, vanilla, and lemon zest until the liquid smells like a sunlit meadow after rain. Tip the dry ingredients into the wet and fold gently with a spatula just until no flour streaks remain; a few tiny lumps are fine.
  4. 4Divide the batter evenly among the prepared cups, filling each two-thirds full so the cakes can rise into soft domes. Bake for 18 to 22 minutes, until the tops spring back lightly when touched and a toothpick comes out with only a moist crumb or two.
  5. 5While the cakes bake, warm the extra honey in a small saucepan over low heat until it loosens into a pourable glaze, one minute; do not let it boil. Remove the cakes from the oven and let them rest in the tin for five minutes.
  6. 6Turn the warm cakes out onto a wire rack set over parchment. Immediately brush the tops and sides with the warm honey glaze so it soaks in and leaves a gentle sheen.
  7. 7Scatter a few edible flower petals or lavender buds over the sticky tops while the glaze is still tacky for a foraged garden look. Allow the cakes to cool another ten minutes so the honey sets into a soft lacquer.
  8. 8Serve on a pastel plate with a tiny spoon of leftover honey on the side, as if shared at a quiet writing desk overlooking the city lights.
