Warm Cider-Glazed Apple Fritter Rings

Apple fritter rings nod to classic American fairground sweets, where autumn fruit meets a crisp fried batter. These warm cider-glazed versions keep the apple rings intact, finishing with a tangy-sweet apple cider shine.

Ingredients

  • 2 large firm apples
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 large egg
  • 3/4 cup whole milk
  • 1 tsp vanilla extract
  • 4 cups vegetable oil for frying
  • 1 cup apple cider
  • 1 1/2 cups powdered sugar
  • 2 tbsp unsalted butter

Instructions

  1. 1Core the apples and slice them crosswise into 1/2-inch thick rings, then use a small cutter or knife to remove the center cores so each piece forms a clean ring. Pat the rings thoroughly dry with paper towels so the batter will cling.
  2. 2In a large mixing bowl whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt until evenly combined.
  3. 3In a separate bowl beat the egg with the milk and vanilla until smooth, then pour the wet mixture into the dry ingredients and stir just until a thick batter forms with no large dry pockets.
  4. 4Pour oil into a deep heavy pot or Dutch oven to a depth of about 2 inches and heat over medium to 350°F, checking with a thermometer.
  5. 5Working in small batches, dip each apple ring into the batter, letting excess drip off, then carefully lower into the hot oil. Fry 2 to 3 minutes per side until deep golden brown and puffed, turning once with tongs.
  6. 6Transfer fried rings to a wire rack set over a sheet pan to drain while you finish the remaining batches, keeping the oil temperature steady near 350°F.
  7. 7For the glaze, simmer the apple cider in a small saucepan over medium heat until reduced by half and slightly syrupy, about 8 to 10 minutes. Whisk in the butter until melted, then remove from heat and gradually whisk in the powdered sugar until smooth and pourable.
  8. 8While the fritter rings are still warm, dip or spoon the cider glaze over both sides so it sets into a shiny coat. Let the glaze firm for 2 minutes, then arrange on a platter and serve immediately while crisp.
