Ingredients

  • 3 medium firm baking apples
  • 1 tbsp lemon juice
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 6 tbsp cold unsalted butter
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup

Instructions

  1. 1Preheat the oven to 375°F and lightly coat a 24-cup mini muffin tin with cooking spray so the bites release cleanly later.
  2. 2Core the apples and dice them into small, even pieces the size of a pea so they soften quickly and fit the cups.
  3. 3Toss the diced apples with lemon juice in a bowl to keep them bright and prevent browning while you make the crisp topping.
  4. 4In a separate bowl combine the rolled oats, flour, brown sugar, cinnamon, nutmeg, and salt, stirring until the dry mixture looks uniform.
  5. 5Cut the cold butter into small cubes and work it into the oat mixture with your fingertips or a pastry blender until it forms coarse, pea-sized crumbs that hold together when pinched.
  6. 6Stir the vanilla extract and maple syrup into the apple pieces so every bit is lightly coated and fragrant.
  7. 7Spoon a generous layer of the oat crumble into the bottom of each mini muffin cup and press it firmly to form a base.
