Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup cold unsalted butter
  • 1/4 oz dried porcini mushrooms
  • 1/2 tsp kosher salt
  • 1 tsp vanilla extract
  • 4 medium firm apples
  • 1 tbsp fresh lemon juice
  • 1/4 cup maple syrup
  • 2 tbsp light brown sugar
  • 1/2 tsp ground cinnamon
  • 1 tsp leaves fresh thyme
  • 1 tsp apple cider vinegar
  • 2 tbsp unsalted butter for compote
  • 1/4 cup toasted chopped hazelnuts

Instructions

  1. 1Grind the dried porcini to a fine powder in a spice grinder or with a mortar and pestle; you need powder for a subtle earthy note.
  2. 2In a bowl combine flour, powdered sugar, porcini powder, and salt. Cut in the cold butter and vanilla until the dough forms soft clumps that hold when pressed.
  3. 3Press the dough evenly into a 9-inch round tart pan or square pan lined with parchment. Prick all over with a fork and chill 15 minutes.
  4. 4Bake the shortbread at 350°F for 22 to 25 minutes until the edges are pale gold and the center feels set but still tender. Cool completely in the pan, then cut into wedges.
  5. 5For the compote, peel, core, and cut the apples into thin wedges. Toss immediately with lemon juice.
  6. 6Melt the butter for the compote in a wide skillet over medium heat. Add the apple wedges and cook 4 to 5 minutes, stirring gently, until they begin to soften and take on light color.
  7. 7Stir in maple syrup, brown sugar, cinnamon, thyme, and apple cider vinegar. Continue cooking 6 to 8 minutes more until the apples are tender but still hold their shape and the syrup thickens to a glossy glaze.
  8. 8Remove from heat and let the compote sit 5 minutes so the flavors settle and the liquid becomes spoonable.
  9. 9Arrange shortbread wedges on a large platter. Spoon the warm apple compote generously over and them, letting some syrup pool.
  10. 10Scatter toasted hazelnuts on top for crunch. Serve immediately so the shortbread stays crisp against the warm fruit for a shareable potluck centerpiece.
