Walnut Streusel Apple Betty

Walnut Streusel Apple Betty

Apple Betty traces its roots to early American kitchens as a thrifty baked fruit dessert with a crumbly topping. This version crowns tender spiced apples with a walnut-oat streusel sweetened by maple and a whisper of cardamom.

Ingredients

  • 2.75 lb firm apples such as Cortland or Braeburn
  • 1.5 tbsp fresh lemon juice
  • 1/2 cup granulated sugar
  • 3/4 cup packed dark brown sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/2 tsp kosher salt
  • 1.25 cups all-purpose flour
  • 1 cup chopped toasted walnuts
  • 3/4 cup cold unsalted butter
  • 1/2 cup old-fashioned oats
  • 2 tbsp pure maple syrup

Instructions

  1. 1Set the oven to 365°F and grease a 9-inch square or round deep baking dish.
  2. 2Peel and slice the apples into even wedges; toss with lemon juice to prevent browning.
  3. 3Combine the apples with the granulated sugar, half the brown sugar, cinnamon, cardamom, and half the salt until the fruit looks glossy and well seasoned.
  4. 4Transfer the apple mixture to the prepared dish and drizzle the maple syrup over the top.
  5. 5For the streusel, whisk the flour, remaining brown sugar, oats, remaining salt, and most of the walnuts in a bowl.
  6. 6Cut the cold butter into the dry ingredients with a fork or fingers until the mixture forms irregular clumps ranging from pea to marble size.
  7. 7Scatter the walnut streusel thickly and evenly over the apples, then sprinkle the reserved walnuts on top for extra crunch.
  8. 8Bake 40 to 48 minutes until the streusel is deep golden, the walnuts smell toasted, and apple juices bubble vigorously at the sides.
  9. 9If needed, rotate the pan halfway through for even browning.
  10. 10Cool on a rack for 15 to 20 minutes so the filling thickens from runny to spoonable.
  11. 11Break into the crisp walnut top with a spoon and serve warm, making sure each plate gets a mix of tender spiced apples and buttery nutty crumbs.
  12. 12Optional: a spoon of plain yogurt or ice cream beside it balances the richness without masking the Betty.
