Ingredients

  • 2 large ripe bananas
  • 1/3 cup creamy peanut butter
  • 3/4 cup unsweetened almond milk
  • 1/2 cup plain Greek yogurt
  • 1 cup frozen banana chunks
  • 1 tbsp chia seeds
  • 1 tbsp honey
  • 1/4 cup roasted unsalted peanuts
  • 1 medium fresh banana slices
  • 1/4 cup granola
  • 1 tbsp cocoa nibs
  • 1 pinch pinch of salt

Instructions

  1. 1Peel the ripe bananas and break them into chunks, then add them to a high-speed blender along with the frozen banana chunks.
  2. 2Spoon in the creamy peanut butter, Greek yogurt, almond milk, chia seeds, honey, and salt.
  3. 3Blend on high until the mixture is completely smooth, thick, and spoonable, stopping once to scrape down the sides so no peanut butter streaks remain.
  4. 4If the blend is too thin to hold toppings, add a few more frozen banana pieces and pulse briefly until it reaches a soft-serve consistency.
  5. 5Divide the thick smoothie base evenly between two chilled bowls, using the back of a spoon to create a shallow well in the center of each.
  6. 6Roughly chop the roasted unsalted peanuts so you get a mix of halves and smaller bits for crunch.
  7. 7Arrange fresh banana slices in a neat fan on one side of each bowl.
  8. 8Scatter the chopped peanuts, granola, and cocoa nibs over the remaining surface so every spoonful gets peanut flavor and texture.
  9. 9Serve immediately with a spoon while the base is still cold and the toppings stay crisp.
