Ingredients
- 2 cups cubed fresh sugar pumpkin or pie pumpkin
- 3 medium ripe pears
- 1/4 cup maple syrup
- 1 tsp orange zest
- 3/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 3/4 cup all-purpose flour
- 1/2 cup rolled oats
- 1/3 cup light brown sugar
- 5 tbsp cold unsalted butter
- 1/4 cup sliced almonds
- 1/8 tsp pinch of sea salt
Instructions
- 1Heat the oven to 375°F and grease an 8-inch or 9-inch baking dish.
- 2Peel and cube the fresh pumpkin into half-inch pieces; peel, core, and dice the pears to similar size.
- 3Toss the pumpkin and pear pieces with maple syrup, orange zest, cinnamon, and nutmeg until evenly coated and fragrant.
- 4Spread the fruit mixture in the baking dish in a single snug layer.
- 5In a mixing bowl stir together the flour, oats, brown sugar, salt, and sliced almonds.
- 6Rub the cold butter into the dry ingredients with your fingers until the mixture looks like damp sand with some larger crumbs.
- 7Sprinkle the crumble topping generously and evenly over the fruit, leaving a few gaps for steam to escape.
- 8Bake 40 to 45 minutes until the topping is crisp and golden brown and the pumpkin is tender when pierced.
- 9Cool on a rack for at least 15 minutes so the juices settle and the crumble firms.
- 10Spoon into bowls while still warm; the pears should be soft and the pumpkin lightly caramelized at the edges.
