Ingredients

  • 3 medium crisp apples
  • 1 tbsp fresh lemon juice
  • 3 tbsp honey
  • 3 oz fresh cremini mushrooms
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 1/2 cups plain Greek yogurt
  • 2 tbsp fresh mint leaves
  • 1 tsp fresh thyme leaves
  • 1/4 cup toasted sliced almonds
  • 1/8 tsp pinch of sea salt
  • 2 tbsp apple cider

Instructions

  1. 1Peel, core, and roughly chop the apples, then place them in a saucepan with the lemon juice, apple cider, and half the honey.
  2. 2Cook the apples over medium heat, stirring occasionally, until they collapse into a soft, chunky compote, about 12 to 15 minutes; mash lightly with a fork and cool completely.
  3. 3While the apples cook, finely mince the mushrooms and warm them in a small dry skillet over medium heat until they soften and any moisture evaporates, about 3 minutes.
  4. 4Stir the remaining honey, cinnamon, vanilla, and sea salt into the warm mushrooms so they glaze; remove from heat and cool to room temperature.
  5. 5Fold the cooled mushroom honey mixture into the cooled apple compote, reserving a spoonful of the glazed mushrooms for garnish.
  6. 6In a separate bowl, stir the Greek yogurt until smooth and lightly aerated; taste and adjust sweetness with a drizzle of honey if needed.
  7. 7Gently fold the apple-mushroom mixture into the yogurt in two or three additions, leaving visible ribbons rather than fully blending for a classic fool look.
  8. 8Chop most of the mint and thyme and fold the herbs through the mixture for freshness.
  9. 9Spoon the fool into four small glasses or jars, tapping lightly so it settles without deflating.
  10. 10Chill the glasses for at least 45 minutes so the flavors meld and the texture firms slightly.
  11. 11Just before serving, top each portion with the reserved glazed mushrooms, toasted almonds, and a few whole mint leaves.
  12. 12Serve cold straight from the fridge so the no-cook assembly stays bright and shareable for a weekend gathering.
