Ingredients

  • 4 medium baking apples
  • 5 oz button or cremini mushrooms
  • 1/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 tbsp fresh lemon juice
  • 3/4 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 6 tbsp cold unsalted butter
  • 1/3 cup chopped toasted pecans
  • 1/4 tsp pinch of salt
  • for serving (optional) vanilla ice cream

Instructions

  1. 1Preheat the oven to 375°F. Lightly butter a 10-inch cast-iron skillet or similar baking dish.
  2. 2Peel, core, and slice the apples into thin wedges. Wipe the mushrooms clean and finely chop them so they melt into the fruit.
  3. 3In a large bowl toss the apples and mushrooms with the granulated sugar, half the brown sugar, cinnamon, nutmeg, ginger, lemon juice, and salt until evenly coated.
  4. 4Spread the fruit-mushroom mixture in an even layer in the prepared skillet.
  5. 5In another bowl combine the flour, oats, remaining brown sugar, and salt. Cut in the cold butter with a pastry blender or fingertips until the mixture forms pea-sized clumps. Stir in the pecans.
  6. 6Scatter the oat topping evenly over the fruit, covering most of the surface but leaving a few gaps for steam.
  7. 7Bake until the topping is deep golden and crisp and the filling is bubbling thickly the edges, 35 to 42 minutes.
  8. 8Rest the crisp 10 to 15 minutes so the juices thicken. Scoop into bowls while still warm and top with a small scoop of vanilla ice cream if you like.
