Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 1 cup dark chocolate chips
  • 2 tbsp powdered sugar for dusting

Instructions

  1. 1Preheat the oven to 350°F and line two baking sheets with parchment paper so the little soot sprites have a soft landing.
  2. 2In a medium bowl whisk together the flour, cocoa powder, baking soda, and sea salt until the mixture looks like fine dark forest soil.
  3. 3In a large bowl cream the softened butter with both sugars until the mixture is pale, fluffy, and smells like a warm bakery at dusk, about 3 minutes.
  4. 4Beat in the egg and vanilla until the dough turns glossy and fully blended.
  5. 5Gently fold the dry mixture into the butter mixture just until no flour streaks remain; the dough should feel soft and slightly sticky like rich garden earth.
  6. 6Stir in the dark chocolate chips so they are evenly scattered like tiny glowing embers among the soot.
  7. 7Scoop rounded tablespoons of dough, roll lightly between your palms into little round sprites, and space them 2 inches apart on the prepared sheets.
  8. 8Bake one sheet at a time for 10 to 12 minutes, until the edges look set and matte while the centers still look slightly soft and puffy.
  9. 9Cool the cookies on the sheet for 5 minutes so they firm up, then transfer to a wire rack.
  10. 10While still faintly warm, dust lightly with powdered sugar so each cookie wears a soft ash-like halo.
  11. 11Serve stacked on a wooden board under a tree or by a window; they keep their cozy chew for two days in a tin.
