Roasted Grape Yogurt Parfaits

Ingredients

  • 2 cups seedless red grapes
  • 1 large crisp apple
  • 2 cups plain Greek yogurt
  • 2 tbsp honey
  • 1/4 cup chopped pistachios
  • 1/2 tsp ground cinnamon
  • 2 tbsp fresh mint leaves
  • 1 tsp olive oil
  • 1 pinch of sea salt
  • 1/2 cup granola clusters

Instructions

  1. 1Preheat the oven to 400°F and line a small sheet pan with parchment for easy cleanup.
  2. 2Toss the whole grapes with olive oil, sea salt, and half the cinnamon until lightly coated.
  3. 3Roast the grapes for 12 to 15 minutes until they soften, wrinkle, and release syrupy juices that caramelize slightly on the pan.
  4. 4While the grapes roast, dice the apple into small bite-size cubes and keep them raw for fresh crunch.
  5. 5Stir the Greek yogurt with honey and the remaining cinnamon until smooth and lightly sweetened.
  6. 6Let the roasted grapes cool for 5 minutes so they do not melt the yogurt layers.
  7. 7Spoon a layer of honeyed yogurt into each serving glass, then add diced apple and a spoonful of warm roasted grapes with their juices.
  8. 8Repeat the layers once more, finishing with yogurt on top.
  9. 9Scatter chopped pistachios, granola clusters, and torn mint leaves over each parfait for texture and brightness.
  10. 10Serve immediately or chill up to 4 hours for make-ahead meal-prep desserts.
