
Roasted Grape Yogurt Parfaits

Ingredients
- 2 cups seedless red grapes
- 1 large crisp apple
- 2 cups plain Greek yogurt
- 2 tbsp honey
- 1/4 cup chopped pistachios
- 1/2 tsp ground cinnamon
- 2 tbsp fresh mint leaves
- 1 tsp olive oil
- 1 pinch of sea salt
- 1/2 cup granola clusters
Instructions
- 1Preheat the oven to 400°F and line a small sheet pan with parchment for easy cleanup.
- 2Toss the whole grapes with olive oil, sea salt, and half the cinnamon until lightly coated.
- 3Roast the grapes for 12 to 15 minutes until they soften, wrinkle, and release syrupy juices that caramelize slightly on the pan.
- 4While the grapes roast, dice the apple into small bite-size cubes and keep them raw for fresh crunch.
- 5Stir the Greek yogurt with honey and the remaining cinnamon until smooth and lightly sweetened.
- 6Let the roasted grapes cool for 5 minutes so they do not melt the yogurt layers.
- 7Spoon a layer of honeyed yogurt into each serving glass, then add diced apple and a spoonful of warm roasted grapes with their juices.
- 8Repeat the layers once more, finishing with yogurt on top.
- 9Scatter chopped pistachios, granola clusters, and torn mint leaves over each parfait for texture and brightness.
- 10Serve immediately or chill up to 4 hours for make-ahead meal-prep desserts.
