Ingredients

  • 3 cups seedless red grapes
  • 3 medium tart apples (Honeycrisp or Granny Smith)
  • 2 tbsp fresh lemon juice
  • 1/3 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1/2 cup whole wheat flour
  • 1/3 cup brown sugar
  • 6 tbsp unsalted butter, cold and cubed
  • 1/3 cup chopped toasted pecans
  • 1/4 tsp pinch of kosher salt
  • optional vanilla ice cream or whipped cream for serving

Instructions

  1. 1Preheat the oven to 375°F and lightly butter a 9-inch square baking dish or similar shallow casserole.
  2. 2Halve the grapes and core the apples, then cut the apples into thin half-moons about 1/4-inch thick so they soften evenly with the fruit.
  3. 3Toss the grapes and apple slices in a large bowl with the lemon juice, granulated sugar, cinnamon, and vanilla until every piece looks glossy and lightly coated.
  4. 4Spread the fruit mixture evenly in the prepared dish; the grapes will release juice as they roast and create a jammy base.
  5. 5In a separate bowl combine the oats, whole wheat flour, brown sugar, salt, and pecans.
  6. 6Add the cold butter cubes and work them in with your fingertips or a pastry blender until the mixture forms pea-sized clumps and feels sandy yet cohesive.
  7. 7Scatter the oat topping evenly over the fruit, leaving a few gaps so steam can escape and the edges crisp.
  8. 8Bake on the center rack for 35 to 40 minutes until the topping is deep golden brown, the fruit is bubbling vigorously at the edges, and the apples yield easily when pierced.
  9. 9Let the crumble rest 10 minutes so the juices thicken slightly before scooping.
  10. 10Serve warm in bowls with a scoop of vanilla ice cream or a dollop of lightly sweetened whipped cream if desired.
