Ingredients
- 2 rounds refrigerated pie crusts
- 1 1/2 cups butternut squash, peeled and diced small
- 1 1/2 cups firm apples, peeled cored and diced
- 3 tbsp maple syrup
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp kosher salt
- 1 tbsp unsalted butter
- 1 egg, beaten
- 2 tbsp turbinado sugar
- 2 tbsp all-purpose flour for dusting
Instructions
- 1Preheat the oven to 400°F and line a large baking sheet with parchment paper.
- 2Toss the diced squash and apples with maple syrup, cinnamon, nutmeg, and salt in a bowl until evenly coated.
- 3Melt the butter in a large skillet over medium heat, then add the fruit-squash mixture and cook, stirring often, for 8 to 10 minutes until the squash softens slightly and the apples release juices but still hold shape.
- 4Transfer the filling to a plate and cool completely so it will not melt the pastry.
- 5On a lightly floured surface unroll the pie crusts and cut each into 4 equal rounds using a 4- to 5-inch cutter or bowl as a guide.
- 6Spoon a heaping tablespoon of cooled filling onto the center of each round, leaving a clean border all around.
- 7Brush the edges lightly with beaten egg, fold the dough over into a half-moon, and press firmly to seal; crimp with a fork for a tight edge.
- 8Place the hand pies on the prepared sheet, brush the tops with remaining egg wash, and sprinkle generously with turbinado sugar.
- 9Cut two small slits in the top of each pie to vent steam.
- 10Bake for 20 to 24 minutes until the crusts are deep golden brown and flaky and the filling is bubbling through the vents.
- 11Cool on the sheet for 10 minutes, then move to a wire rack; serve warm or at room temperature on a big platter for easy grabbing at gatherings.
