Ingredients

  • 3 cups cubed fresh sugar pumpkin
  • 3 medium, sliced Honeycrisp apples
  • 3/4 cup brown sugar
  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup cold cubed unsalted butter
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/4 tsp pinch of salt
  • 1/2 cup chopped pecans

Instructions

  1. 1Preheat the oven to 375°F and lightly butter a 9-inch cast-iron skillet or baking dish so the fruit releases easily later.
  2. 2Peel and cube the sugar pumpkin into even bite-size pieces, then core and slice the apples into thin wedges so both roast at the same pace.
  3. 3Toss the pumpkin cubes and apple slices in a large bowl with lemon juice, half the brown sugar, cinnamon, nutmeg, vanilla, and salt until every piece is glossy and fragrant.
  4. 4Spread the seasoned fruit in an even layer in the prepared skillet; the pumpkin should sit snugly among the apples without overcrowding.
  5. 5In a separate bowl combine the oats, flour, remaining brown sugar, and cold butter cubes.
  6. 6Work the butter into the dry mixture with your fingertips until it forms coarse, pea-size crumbs that hold together when squeezed.
  7. 7Stir the chopped pecans into the crumb topping so they toast evenly during baking.
  8. 8Scatter the oat-pecan topping generously over the fruit, covering most of the surface while leaving a few gaps for steam to escape.
  9. 9Bake on the center rack for 35 to 40 minutes until the topping is deep golden and the fruit juices bubble thickly the edges.
  10. 10Remove the skillet and let the crisp rest 10 minutes so the juices thicken into a spoonable sauce.
  11. 11Serve warm straight from the pan, scooping through the crunchy top into the soft roasted pumpkin and apples underneath.
