  • 1 1/2 cups graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 8 oz cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 tbsp key lime zest
  • 1 1/2 cups heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup fresh raspberries or lime zest curls for garnish

Instructions

  1. 1In a small bowl toss the graham cracker crumbs with the melted butter and granulated sugar until every crumb is coated and the mixture clumps lightly when squeezed.
  2. 2Set out six 8-ounce jars or clear glasses. Spoon a generous layer of the buttered crumbs into the bottom of each jar and press gently with the back of a spoon to form a base.
  3. 3In a medium bowl beat the softened cream cheese with a hand mixer until completely smooth and free of lumps, about 1 minute.
  4. 4Add the sweetened condensed milk, key lime juice, and key lime zest. Beat on medium speed until the mixture is thick, glossy, and uniformly pale green-tinged, scraping the bowl once.
  5. 5In a separate chilled bowl whip the heavy cream, powdered sugar, and vanilla extract to stiff peaks. Fold half of the whipped cream gently into the key-lime cream-cheese mixture to lighten it; reserve the remaining whipped cream for topping.
  6. 6Spoon or pipe a thick layer of the key-lime filling over the graham base in each jar, filling them two-thirds full. Tap the jars lightly on the counter to settle the filling.
  7. 7Top each parfait with a swirl of the reserved whipped cream. Cover and refrigerate for at least 2 hours so the crumbs soften slightly and the flavors marry.
  8. 8Just before serving, garnish with a few fresh raspberries or thin lime zest curls. Serve cold with long spoons so guests can dig through every creamy, crunchy layer.
