- 4 thick slices date nut bread
- 4 oz sharp cheddar cheese
- 3 oz Brie cheese
- 2 tbsp unsalted butter
- 2 tsp Dijon mustard
- 1 tsp fresh thyme leaves
- 1/4 tsp black pepper
- 1 tsp honey
Instructions
- 1Set a large cast-iron skillet or heavy griddle over medium-low heat so the bread toasts slowly without scorching the natural sugars in the dates.
- 2Slice the cheddar into thin even pieces and cut the Brie into soft strips so both cheeses melt at roughly the same pace.
- 3Spread a thin layer of Dijon on one side of each date nut bread slice; the mustard cuts the sweetness and helps the cheese cling.
- 4Build two sandwiches by layering cheddar, Brie, thyme, and a grind of black pepper between the mustard-coated sides, then close them gently.
- 5Butter the outer faces of each sandwich lightly and evenly so they brown like classic grilled cheese without greasiness.
- 6Place both sandwiches in the preheated skillet and cook 3 to 4 minutes until the underside turns deep golden and the bread feels crisp when pressed with a spatula.
