Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup light brown sugar, packed
- 1/3 cup pure maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 1/2 cups old-fashioned rolled oats
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup pecans, toasted and chopped
- 1 tbsp extra maple syrup for brushing
Instructions
- 1Preheat the oven to 350°F and line two baking sheets with parchment paper. Toast the pecans in a dry pan until fragrant and golden, cool, then chop into medium pieces so they stay visible in every bite.
- 2In a large bowl cream the softened butter with the brown sugar until light and fluffy, about 2 minutes. Stream in the maple syrup and beat until smooth, then add the egg and vanilla and mix until fully combined.
- 3In another bowl stir together the flour, oats, baking soda, cinnamon, and salt. Add the dry mixture to the wet ingredients and stir just until a thick, sticky dough forms.
- 4Fold in the toasted chopped pecans so they are evenly scattered. The dough will be soft; if it feels too loose, chill for 15 minutes.
- 5Drop rounded tablespoons of dough onto the sheets, spacing them 2 inches apart. Slightly flatten each mound with damp fingers so they bake into even rounds.
- 6Bake for 11 to 14 minutes until the edges are golden brown and the centers look set but still soft. The oats should smell toasty.
- 7Remove from the oven and immediately brush the tops lightly with a little extra maple syrup for shine and extra maple-pecan aroma.
- 8Let the cookies cool on the sheet for 5 minutes so they firm up, then transfer to a wire rack. They stay chewy with crisp edges and plenty of pecan crunch.
