- 1/3 cup rolled oats
- 6 tbsp cold unsalted butter
- 2 tbsp maple sugar or extra brown sugar
- 1/2 tsp kosher salt
- optional vanilla ice cream for serving
Instructions
- 1Preheat the oven to 375°F and arrange four 8-ounce ramekins on a rimmed baking sheet for easy handling.
- 2Peel, core, and dice the apples into 1/2-inch pieces so they cook evenly inside the small dishes.
- 3Toss the diced apples with maple syrup, brown sugar, cinnamon, allspice, lemon zest, and salt until every piece glistens.
- 4Divide the maple-spiced apple mixture evenly among the four ramekins, packing it gently so each is three-quarters full.
- 5In a bowl combine flour, oats, maple sugar, and remaining salt.
- 6Add the cold butter pieces and rub them in with your fingers until the mixture forms irregular clumps and sandy crumbs.
- 7Top each ramekin with a generous mound of the maple crumb, letting some apples peek through at the edges.
- 8Bake 28 to 32 minutes until the toppings are golden and crisp and the maple-apple juices bubble vigorously up the sides.
- 9Carefully remove the baking sheet; let the ramekins cool 10 minutes so the filling thickens and the ramekins are safe to handle.
- 10Serve each individual Betty warm, optionally crowned with a small scoop of vanilla ice cream that melts into the maple crumb.
