
Honeyed Tomato & Berry Fruit Fool

Ingredients
- 1 1/2 cups ripe cherry tomatoes
- 2 cups mixed berries (strawberries, raspberries)
- 3 Tbsp honey
- 1 Tbsp fresh lemon juice
- 8 fresh basil leaves
- 1 1/2 cups heavy whipping cream
- 2 Tbsp powdered sugar
- 1 tsp vanilla extract
- 1/8 tsp pinch of salt
- 1/2 cup crushed shortbread cookies
- for garnish extra basil leaves
Instructions
- 1Halve the cherry tomatoes and place them in a small saucepan with half the honey and a splash of lemon juice. Warm over medium-low heat for 6–8 minutes, stirring gently, until the tomatoes soften, release juices, and turn glossy and jammy.
- 2Remove from heat and stir in the remaining honey and a few torn basil leaves. Let the mixture cool completely; the tomatoes will keep their shape but taste candy-sweet.
- 3Hull and roughly chop the strawberries if large; leave raspberries whole. Fold the berries into the cooled honeyed tomatoes along with the rest of the lemon juice and salt.
- 4In a large chilled bowl whip the heavy cream with powdered sugar and vanilla until soft-to-medium peaks form; the cream should billow but still look silky.
- 5Gently fold two-thirds of the tomato-berry mixture into the whipped cream, leaving distinct streaks of fruit rather than fully blending—this is the classic fool texture.
- 6Spoon the fool into four glasses or small bowls, layering in a spoonful of the reserved fruit mixture and a sprinkle of crushed shortbread halfway up for crunch.
- 7Top each serving with the last of the fruit and a final dusting of cookie crumbs. Chill 20–30 minutes so the flavors settle and the cream firms.
- 8Garnish with a fresh basil leaf just before serving. The bright acid and herbal note make this feel light and perfect for a late-summer backyard table.
