Ingredients

  • 1/2 large cake angel food cake
  • 4 medium ripe peaches
  • 3 tbsp melted butter
  • 3 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp honey or maple syrup
  • 12 wooden or metal skewers
  • for serving (optional) vanilla ice cream or whipped cream

Instructions

  1. 1If using wooden skewers, soak them in water for at least 20 minutes so they do not burn on the grill. Preheat a grill or grill pan to medium heat (about 375°F).
  2. 2Cut the angel food cake into 1 1/2-inch cubes. Pit the peaches and cut them into similar-sized wedges or chunks that will stay on the skewers.
  3. 3In a small bowl, stir together the melted butter, brown sugar, cinnamon, and vanilla until the sugar mostly dissolves into a fragrant glaze.
  4. 4Thread alternating pieces of cake and peach onto the skewers, leaving a little space between pieces so heat can circulate. Brush the assembled skewers lightly all over with the cinnamon-butter glaze.
  5. 5Place the skewers on the hot grill. Cook for 2 to 3 minutes per side, turning carefully, until the cake is marked with golden grill lines and lightly toasted and the peaches soften and caramelize at the edges.
  6. 6Watch closely—the cake toasts quickly. Brush once more with remaining glaze during the last turn for extra shine and spice.
  7. 7Transfer the skewers to a platter. Drizzle lightly with honey or maple syrup while still warm.
