ThemedDessert30-minuteClassic SwapBritish
Ingredients
- 3 medium tart apples
- 2 cups seedless green and red grapes
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/3 cup coconut sugar
- 5 tbsp unsalted butter
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tsp fresh lemon zest
- 1 pinch of salt
- 1 tbsp cornstarch
Instructions
- 1Preheat the oven to 375°F and set out an 8-inch square baking pan or similar shallow dish.
- 2Core and thinly slice the apples, then halve the grapes so they release juice and cook evenly with the fruit.
- 3Toss the sliced apples and halved grapes with cornstarch, half the cinnamon, lemon zest, and vanilla until evenly coated and slightly glossy.
- 4Spread the fruit mixture in an even layer in the baking pan so it will bubble up the topping.
- 5In a separate bowl combine the oats, almond flour, coconut sugar, remaining cinnamon, and salt.
- 6Cut the cold butter into small pieces and rub it into the dry mixture with your fingertips until clumpy and crumbly with some larger bits remaining.
- 7Scatter the oat crumble evenly over the fruit, pressing lightly in spots for texture contrast.
- 8Bake for 22 to 28 minutes until the topping is deep golden and the fruit juices are bubbling thickly at the edges.
- 9Cool for at least 10 minutes so the filling sets, then scoop into bowls while still warm.
