Ingredients

  • 3 medium tart apples
  • 2 cups seedless green and red grapes
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/3 cup coconut sugar
  • 5 tbsp unsalted butter
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp fresh lemon zest
  • 1 pinch of salt
  • 1 tbsp cornstarch

Instructions

  1. 1Preheat the oven to 375°F and set out an 8-inch square baking pan or similar shallow dish.
  2. 2Core and thinly slice the apples, then halve the grapes so they release juice and cook evenly with the fruit.
  3. 3Toss the sliced apples and halved grapes with cornstarch, half the cinnamon, lemon zest, and vanilla until evenly coated and slightly glossy.
  4. 4Spread the fruit mixture in an even layer in the baking pan so it will bubble up the topping.
  5. 5In a separate bowl combine the oats, almond flour, coconut sugar, remaining cinnamon, and salt.
  6. 6Cut the cold butter into small pieces and rub it into the dry mixture with your fingertips until clumpy and crumbly with some larger bits remaining.
  7. 7Scatter the oat crumble evenly over the fruit, pressing lightly in spots for texture contrast.
  8. 8Bake for 22 to 28 minutes until the topping is deep golden and the fruit juices are bubbling thickly at the edges.
  9. 9Cool for at least 10 minutes so the filling sets, then scoop into bowls while still warm.
