Fresh Grape & Apple Crisp

Fresh Grape & Apple Crisp

American fruit crisps grew from simple farm-kitchen baking, crowning seasonal fruit with a buttery oat streusel. Here red seedless grapes meet tart apples under that golden crunch, finished warm with a scoop of vanilla ice cream.

Ingredients

  • 2 cups red seedless grapes
  • 3 medium tart apples
  • 2 tbsp fresh lemon juice
  • 1/3 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 6 tbsp cold unsalted butter
  • 1/4 tsp pinch of salt
  • optional vanilla ice cream for serving

Instructions

  1. 1Preheat the oven to 375°F and lightly butter an 8-inch or 9-inch square baking dish.
  2. 2Core and slice the apples into thin wedges; halve the grapes if large.
  3. 3In a large bowl toss the fruit with lemon juice, granulated sugar, cornstarch, and cinnamon until evenly coated.
  4. 4Transfer the fruit mixture to the prepared dish and spread into an even layer.
  5. 5In another bowl combine the oats, flour, brown sugar, and salt.
  6. 6Cut the cold butter into small cubes and work it into the dry mixture with your fingers or a pastry blender until clumps form and the texture resembles coarse crumbs.
  7. 7Scatter the oat topping evenly over the fruit, covering most of the surface.
  8. 8Bake for 35 to 42 minutes until the topping is deep golden and the fruit juices bubble thickly the edges.
  9. 9Cool on a wire rack for 15 minutes so the filling sets slightly.
  10. 10Scoop into bowls while still warm and top with a small scoop of vanilla ice cream if desired.
  11. 11Place the baking dish on a trivet in the center of the table for family-style serving.
  12. 12The mix of juicy grapes and tender apples keeps the crisp bright and not overly sweet.
