Ingredients
- 3/4 cup roasted crickets
- 12 oz dark chocolate chips
- 1/2 cup heavy cream
- 2 tbsp unsalted butter
- 1/3 cup cocoa powder
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
- 2 tbsp crushed freeze-dried raspberries
Instructions
- 1Finely chop half of the roasted crickets and leave the remaining half whole so every truffle delivers both texture and visible insect pieces.
- 2Place the dark chocolate chips in a medium heatproof bowl. Heat the heavy cream and butter together in a small saucepan over medium heat until the mixture just begins to simmer the edges.
- 3Pour the hot cream mixture over the chocolate chips, let it sit undisturbed for two minutes, then stir slowly from the center outward until a smooth ganache forms.
- 4Stir in the vanilla extract, fine sea salt, and all of the chopped crickets until evenly incorporated.
- 5Cover the bowl and refrigerate the ganache for 45 minutes until it is firm enough to scoop yet still pliable.
- 6In a shallow dish combine the cocoa powder, powdered sugar, and crushed freeze-dried raspberries.
- 7Using a small cookie scoop or two spoons, portion the chilled ganache into twelve equal mounds. Press two or three whole roasted crickets into the center of each mound and roll into neat balls.
- 8Roll each truffle thoroughly in the cocoa-raspberry mixture until fully coated, tapping off any excess.
- 9Arrange the finished truffles on a parchment-lined plate and chill for an additional 20 minutes so the coating sets.
- 10Serve slightly chilled; the chocolate shell should crack softly to reveal the crunchy insect center.
