Ingredients

  • 1 (thawed) puff pastry sheet
  • 3 medium firm baking apples
  • 6 oz cremini mushrooms
  • 3 tbsp unsalted butter
  • 1/3 cup brown sugar
  • 2 tbsp honey
  • 1 tsp ground cinnamon
  • 1 tsp fresh thyme leaves
  • 1 tsp vanilla extract
  • 1/8 tsp pinch of salt
  • 1 (for wash) egg
  • 1 tbsp coarse sugar

Instructions

  1. 1Preheat the oven to 400°F and line a rimmed baking sheet with parchment. Unfold the thawed pastry onto the sheet and lightly score a half-inch border the edge without cutting through.
  2. 2Core and thinly slice the apples into even half-moons so they cook uniformly. Wipe and thinly slice the mushrooms.
  3. 3Melt the butter in a large skillet over medium heat until foaming. Add the mushrooms and cook, stirring occasionally, until they release moisture and turn golden at the edges, about 6 to 8 minutes.
  4. 4Stir in the brown sugar, honey, cinnamon, thyme, vanilla, and salt. Add the apple slices and cook, tossing gently, until the apples soften slightly and the mixture turns glossy and caramelized, 5 to 7 minutes. Remove from heat and let cool 5 minutes so it does not melt the pastry.
  5. 5Spoon the warm apple-mushroom filling inside the scored border, spreading it in an even layer and leaving the edges clear.
  6. 6Beat the egg with a splash of water and brush it over the pastry border. Sprinkle the border with coarse sugar for sparkle and crunch.
  7. 7Bake until the pastry is deeply golden, puffed, and the filling is bubbling at the edges, 22 to 28 minutes. Rotate the pan halfway if your oven has hot spots.
  8. 8Cool on the sheet for 10 minutes so the caramel sets slightly. Slice into wedges and serve warm, optionally with a spoon of lightly sweetened whipped cream if desired.
