  • 1 can (16 oz) or 2 crusts refrigerated biscuit dough or pie dough
  • 3 medium apples
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3 Tbsp unsalted butter, melted
  • 1/2 cup store-bought or homemade caramel sauce
  • 1/4 tsp flaky sea salt
  • 1/2 tsp vanilla extract
  • 1 egg wash (egg + splash milk)

Instructions

  1. 1Preheat the oven to 375°F and line a large rimmed baking sheet with parchment paper.
  2. 2Peel, core, and dice the apples into small 1/2-inch cubes so they cook through quickly inside the pastry.
  3. 3Toss the apple cubes with granulated sugar, brown sugar, cinnamon, nutmeg, melted butter, and vanilla until every piece is coated and glossy.
  4. 4Roll or stretch the dough thin and cut into roughly 3-inch squares or circles.
  5. 5Place a heaping spoonful of the spiced apple mixture in the center of each dough piece.
  6. 6Fold the dough over or gather the edges and pinch tightly to seal into small dumpling bites, making sure no filling escapes.
  7. 7Arrange the sealed bites seam-side down on the prepared sheet, spacing them an inch apart. Brush the tops lightly with egg wash.
  8. 8Bake for 18 to 22 minutes until the pastry is puffed and golden brown and the apples inside feel soft when gently pressed.
  9. 9While the bites cool for 5 minutes on the sheet, warm the caramel sauce until pourable.
  10. 10Transfer the warm bites to a serving platter and drizzle generously with caramel.
  11. 11Finish with a light sprinkle of flaky sea salt so the sweet-salty contrast pops.
  12. 12Serve immediately while the pastry is still crisp and the caramel is glossy.
