Ingredients
- 4 medium firm baking apples
- 8 oz cremini mushrooms
- 2 tsp fresh thyme leaves
- 1 tsp minced fresh rosemary
- 1 tbsp lemon juice
- 3 tbsp maple syrup
- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/3 cup chopped walnuts
- 4 tbsp cold unsalted butter
- 1 tsp ground cinnamon
- 1/8 tsp pinch of salt
- 1 tbsp olive oil
Instructions
- 1Preheat the oven to 375°F and lightly oil an 8-inch square baking dish.
- 2Core the apples and slice them into thin wedges, leaving the peels on for texture and color.
- 3Wipe the mushrooms clean and slice them thinly so they cook evenly with the fruit.
- 4Toss the apple slices and mushroom slices together in a large bowl with the lemon juice, maple syrup, thyme, rosemary, and a light drizzle of olive oil until everything is glossy and fragrant.
- 5Spread the apple-mushroom mixture evenly in the prepared baking dish in a single snug layer.
- 6In a separate bowl combine the oats, flour, walnuts, cinnamon, and salt.
- 7Cut the cold butter into the dry mixture with your fingertips until it forms coarse, pea-sized crumbs that hold together when pinched.
- 8Scatter the crumble topping evenly over the fruit and mushrooms, pressing lightly so it adheres in places.
- 9Bake on the center rack for 32 to 38 minutes until the topping is deeply golden and the apples are tender when pierced with a knife tip.
- 10Listen for gentle bubbling at the edges and look for caramelized juices pooling slightly the fruit.
- 11Remove from the oven and let the bake rest 10 minutes so the juices thicken.
- 12Spoon into bowls while still warm, letting the herbal aroma rise with each serving.
