Ingredients
- 2 large crisp apples, cored and sliced into thin wedges
- 1 tbsp unsalted butter
- 2 tbsp honey
- 3/4 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1 pinch of salt
- 2 cups plain Greek yogurt
- 3 tbsp toasted pumpkin seeds
- 2 tbsp chopped toasted almonds
- 1 tsp fresh thyme leaves
- 1 tbsp extra honey for drizzling
Instructions
- 1Core the apples and cut them into thin, even wedges so they cook quickly and stay slightly crisp.
- 2Melt the butter in a medium skillet over medium heat until it foams gently.
- 3Add the apple wedges in a single layer. Cook without stirring for 2 minutes so the cut sides begin to caramelize.
- 4Sprinkle the cinnamon, cardamom, and salt over the apples, then drizzle with honey. Toss gently to coat.
- 5Continue cooking, stirring occasionally, until the apples are tender-crisp and glossy with caramelized edges, about 4 to 6 minutes total. Remove from heat.
- 6Divide the Greek yogurt between two bowls, swirling it into a soft nest.
- 7Spoon the warm spiced apples and any skillet juices over the yogurt while still hot so the contrast of temperatures is vivid.
- 8Scatter the toasted pumpkin seeds and chopped almonds on top for crunch.
- 9Finish with a light sprinkle of fresh thyme leaves and an extra drizzle of honey. Serve immediately while the apples are warm and fragrant.
