- 1/2 tsp vanilla extract

- 1/4 cup chopped toasted walnuts (optional)
Instructions
- 1Core and dice the apples into roughly 1/2-inch pieces, leaving the skins on for color and texture; toss immediately with the lemon juice to prevent browning.
- 2Place the apples in a medium saucepan with the water, maple syrup, cinnamon, nutmeg, ginger, and salt.
- 3Bring the mixture to a gentle simmer over medium heat, then reduce to medium-low and cover partially.
- 4Cook 12 to 15 minutes, stirring occasionally, until the apples soften and release their juices but still hold some shape; the liquid should look lightly syrupy.
- 5Uncover, add the butter, and continue simmering 2 to 3 minutes more so the sauce thickens slightly and coats the fruit.
- 6Remove from heat and stir in the vanilla; the residual warmth will bloom the aroma without cooking it off.
