Ingredients

  • 3 large crisp apples
  • 2 tbsp unsalted butter
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1 pinch pinch of ground cloves
  • 1 tbsp fresh lemon juice
  • 4 slices thick-cut whole-grain bread
  • 3/4 cup ricotta cheese
  • 2 tbsp honey
  • 3 tbsp toasted sunflower seeds
  • 2 tsp fresh thyme leaves
  • 1/4 tsp kosher salt

Instructions

  1. 1Core the apples and cut them into small even dice so they cook quickly and stay slightly chunky.
  2. 2Melt butter in a medium skillet over medium heat until foaming.
  3. 3Add the diced apples, brown sugar, cinnamon, ginger, cloves, and salt, stirring to coat.
  4. 4Cook, stirring occasionally, until the apples soften and release juices and the mixture turns glossy and jammy, 8–10 minutes.
  5. 5Stir in lemon juice, then remove from heat and keep warm.
  6. 6Toast the bread slices until deeply golden and crisp on both sides.
  7. 7Spread a generous layer of ricotta over each warm toast.
  8. 8Spoon the warm spiced apple compote evenly over the ricotta.
  9. 9Drizzle with honey, scatter sunflower seeds and fresh thyme on top, and serve immediately while the toast is still crunchy and the apples are hot.
