Ingredients

  • 4 thick sourdough bread slices
  • 10 oz mixed mushrooms (cremini and shiitake)
  • 1 medium Granny Smith apple
  • 1 shallot
  • 6 fresh sage leaves
  • 1 garlic clove
  • 3/4 cup ricotta cheese
  • 1 tsp lemon zest
  • 3 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 tsp honey
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • pinch red pepper flakes
  • 2 tbsp fresh chives, snipped

Instructions

  1. 1Stir the ricotta with lemon zest, salt, and a drizzle of olive oil until creamy and spreadable. Keep chilled until assembly.
  2. 2Wipe the mushrooms clean and tear or slice them into bite-size pieces. Thinly slice the apple into matchsticks or very thin wedges. Mince the shallot and garlic; stack and thinly slice the sage.
  3. 3Heat a large skillet over medium-high heat with most of the olive oil and the butter. When shimmering, add the mushrooms in a single layer and cook undisturbed for 3 minutes to develop deep browning.
  4. 4Stir in the shallot and continue cooking until the mushrooms are deeply golden and any liquid has evaporated, another 4 to 5 minutes. Season with salt, black pepper, and red pepper flakes.
  5. 5Add the garlic and sage; toss for 30 to 45 seconds until the sage crisps slightly and the kitchen smells fragrant. Remove the pan from heat.
  6. 6Toast the sourdough slices until deeply golden and crisp on both sides, either in a toaster, under the broiler, or in a dry skillet.
  7. 7Spread a generous layer of the lemon ricotta on each warm toast. Pile the hot mushroom mixture evenly over the ricotta.
  8. 8Tuck apple matchsticks over and the mushrooms so some stay cool and crisp. Drizzle lightly with honey, finish with snipped chives, and serve immediately while the toast is still warm and shareable on a board.
