Ingredients
- 4 thick sourdough bread slices
- 1 1/2 cups whole-milk ricotta
- 2 cups red and green seedless grapes
- 2 small ripe late tomatoes
- 1 small yellow squash
- 2 tsp fresh thyme leaves
- 1/4 cup fresh basil leaves
- 2 tbsp fresh mint leaves
- 3 tbsp extra-virgin olive oil
- 2 tbsp honey
- 1 tsp lemon juice
- 1/2 tsp flaky sea salt
- 1/4 tsp black pepper
- 3 tbsp toasted pine nuts
Instructions
- 1Preheat the oven to 400°F or heat a grill pan over medium-high. Brush both sides of the sourdough slices lightly with olive oil.
- 2Toast the bread directly on the oven rack or grill pan for 3 to 4 minutes per side until deeply golden and crisp at the edges but still tender in the center.
- 3While the bread toasts, halve the grapes. Cut the tomatoes into thin wedges and shave the yellow squash into thin ribbons with a vegetable peeler.
- 4Warm a skillet over medium heat with a drizzle of olive oil. Add the grape halves and cook 2 to 3 minutes, shaking the pan, until they soften slightly and a few skins begin to blister.
- 5Stir in the thyme and salt, then pull the pan off the heat so the grapes stay juicy rather than jammy. Squeeze in the lemon juice.
- 6Season the ricotta with salt, black pepper, and a spoonful of olive oil. Stir until creamy and spreadable.
- 7Spread a thick layer of ricotta over each warm toast, reaching the edges. Pile on the warm grapes, tomato wedges, and squash ribbons in loose folds.
- 8Tear the basil and mint over the top. Scatter pine nuts and finish with honey, flaky salt, and a last grind of pepper.
