- 1 large bunch lacinato kale
- 2 medium crisp apples
- 3 tbsp extra-virgin olive oil
- 4 slices thick-cut bacon
- 8 oz cremini mushrooms
- 4 large eggs
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tbsp maple syrup
- 3 tbsp toasted sunflower seeds
- ½ tsp fresh cracked black pepper
- to finish flaky sea salt
Instructions
- 1Strip the kale leaves from the stems, tear into bite-size pieces, and place in a large serving bowl.
- 2Massage the kale with a drizzle of the olive oil and salt for 1–2 minutes until it darkens and softens.
- 3Dice the bacon and cook in a 12-inch skillet over medium heat until crisp, about 6–8 minutes; transfer to a paper towel, leaving the fat in the pan.
- 4Core and cut the apples into ½-inch wedges while the bacon cooks.
- 5Add the remaining olive oil to the bacon fat if needed, then sauté the apple wedges and sliced mushrooms together over medium-high heat until the apples are golden and the mushrooms release their liquid, 5–7 minutes.
- 6Whisk the cider vinegar, Dijon, and maple syrup in a small bowl to make a quick warm dressing.
- 7Push the apples and mushrooms to the side of the skillet and crack in the eggs; cook sunny-side up or over-easy until the whites are set but yolks still runny, about 3 minutes.
- 8Pour the warm dressing over the massaged kale and toss so every leaf is lightly coated.
- 9Top the kale with the hot sautéed apples and mushrooms, crumbled bacon, and the fried eggs.
- 10Scatter sunflower seeds and finish with cracked pepper and flaky salt.
