Ingredients
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp kosher salt
- 2 large eggs
- 1 cup apple cider
- 1/2 cup whole milk
- 3 tbsp unsalted butter, melted
- 2 tbsp brown sugar
- 1 tsp vanilla extract
- 1 medium Honeycrisp apple, grated
- 2 tbsp butter for the griddle
- 1/2 cup warm apple cider for serving
- 1/3 cup maple syrup
- 1/4 cup toasted pumpkin seeds
Instructions
- 1In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.
- 2In a separate bowl, beat the eggs with the apple cider, milk, melted butter, brown sugar, and vanilla until smooth and lightly frothy.
- 3Pour the wet mixture into the dry ingredients and stir gently until just combined; a few small lumps are fine and keep the pancakes tender.
- 4Fold in the grated apple so it is distributed throughout the batter. Let the batter rest 5 minutes while the griddle heats.
- 5Heat a large griddle or nonstick skillet over medium heat. Lightly butter the surface; it should sizzle softly when ready.
- 6Scoop batter per pancake onto the griddle, spacing them so they can spread. Cook until bubbles form across the surface and the edges look set and matte, 2 to 3 minutes.
- 7Flip carefully and cook the second side until deep golden brown and cooked through, another 1 to 2 minutes. Adjust heat if they brown too fast.
- 8Transfer finished pancakes to a warm platter and tent loosely with foil while you cook the remaining batter, buttering the griddle as needed.
- 9Warm a small pitcher of apple cider and maple syrup together until steaming and fragrant.
- 10Stack the pancakes high on a shared platter, drizzle with the warm cider-maple mixture, and shower with toasted pumpkin seeds.
- 11Serve family-style so guests can pull stacks onto their plates. Offer extra warm cider on the side for dunking or pouring.
