Ingredients

  • 1 1/2 cups plain whole-milk Greek yogurt
  • 8 oz mixed mushrooms (cremini and oyster)
  • 1 small crisp apple
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground coriander
  • 1 garlic clove
  • 1 lemon
  • 2 tbsp fresh mint leaves
  • 1 tbsp chopped fresh dill
  • 3 tbsp chopped toasted walnuts
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp optional drizzle honey

Instructions

  1. 1Stir the Greek yogurt with salt and the zest of half the lemon until smooth and slightly loosened. Divide between two shallow bowls and swirl the surface.
  2. 2Wipe mushrooms clean and slice or tear into irregular pieces for better browning. Core and thinly slice the apple into matchsticks or half-moons. Mince the garlic.
  3. 3Heat olive oil in a medium skillet over medium-high heat. Add the mushrooms and cook undisturbed 2 to 3 minutes until the undersides caramelize.
  4. 4Add garlic, cumin, smoked paprika, coriander, salt, and pepper. Toss constantly for 2 more minutes until the spices bloom and smell toasty and the mushrooms are tender with crisp edges.
  5. 5Remove the pan from heat. Squeeze in juice from the zested lemon half and toss so the mushrooms pick up a bright finish.
  6. 6Arrange the warm spiced mushrooms over one side of each yogurt bowl. Fan the fresh apple slices on the other side for crunch and sweetness.
  7. 7Scatter mint, dill, and toasted walnuts over everything so every bite has herb brightness and nutty texture.
  8. 8If you like a whisper of sweetness against the spice, drizzle a tiny thread of honey. Serve immediately while the mushrooms are still warm against the cool yogurt.
