Ingredients
- 2 cups old-fashioned rolled oats
- 2 cups unsweetened almond milk
- 1 cup plain Greek yogurt
- 2 medium Honeycrisp or Fuji apples
- 2 tbsp chia seeds
- 3 tbsp pure maple syrup
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 tsp vanilla extract
- 1 pinch of kosher salt
- 1/2 cup chopped toasted walnuts
- 1 tsp fresh thyme leaves (optional garnish)
Instructions
- 1In a large mixing bowl whisk together the almond milk, Greek yogurt, maple syrup, vanilla, cinnamon, ginger, nutmeg, and salt until smooth and evenly spiced.
- 2Stir in the rolled oats and chia seeds until every flake is coated. The mixture will look loose at first; the oats and chia will thicken overnight.
- 3Core the apples. Dice one apple into small cubes and fold those cubes directly into the oat mixture so the fruit softens slightly as it rests.
- 4Divide the oat base evenly among four jars or lidded containers, leaving a little headspace at the top.
- 5Thinly slice or finely dice the second apple and keep it separate in a small container or zip bag so it stays crisp for morning topping.
- 6Seal the jars and refrigerate at least 6 hours or overnight, up to 3 days. The oats should become creamy and spoonable.
- 7In the morning, give each jar a quick stir. If the mixture is thicker than you like, loosen with a splash of almond milk.
- 8Top each serving with the reserved fresh apple, a generous sprinkle of toasted walnuts, an extra dusting of cinnamon, and a few thyme leaves if using. Serve cold or gently warmed for a crowd-friendly breakfast spread.
