  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 pinch pinch of salt
  • 1/4 cup sliced almonds for topping

Instructions

  1. 1Dice the peaches into small bite-size pieces, setting aside a few pretty slices for the tops of the jars. In a large mixing bowl whisk the oats, protein powder, chia seeds, cinnamon, and salt until evenly combined.
  2. 2Add the Greek yogurt, almond milk, maple syrup, almond butter, and vanilla extract to the dry mixture. Stir vigorously for a full minute until the almond butter loosens and everything looks creamy and uniform.
  3. 3Fold most of the diced peaches into the oat mixture, reserving the nicest pieces for garnish. Taste and adjust sweetness if needed—the mixture should taste lightly sweet and peachy.
  4. 4Divide the mixture evenly among four lidded jars or meal-prep containers, packing it down gently so no dry pockets remain. Top each jar with the reserved peach slices and a sprinkle of sliced almonds.
