
Smoky Breakfast Burritos

- 6 large flour tortillas
- 10 large eggs
- 12 oz smoked sausage
- 1 1/2 cups shredded smoked cheddar
- 2 medium russet potatoes
- 1 red bell pepper
- 1 medium yellow onion
- 2 peppers chipotle in adobo
- 1 tbsp adobo sauce
- 1/2 cup sour cream
- 1/4 cup fresh cilantro
- 1 lime
- 2 tbsp olive oil
- 2 tbsp butter
- 1 1/2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
Instructions
- 1Dice the potatoes into small half-inch cubes and finely chop the onion and bell pepper. Mince the chipotle peppers and chop the cilantro; zest and juice the lime into a small bowl and stir the sour cream with the lime zest, a squeeze of juice, and salt until smooth for the crema.
- 2Heat a large cast-iron skillet or griddle over medium-high heat and add olive oil. Add the potato cubes in a single layer, season with salt, pepper, and smoked paprika, and cook undisturbed for several minutes until deeply golden on one side.
- 3Stir the potatoes, add the chopped onion and bell pepper, and continue cooking until the potatoes are tender inside and crisp outside and the vegetables are softened and lightly charred at the edges, about 10 to 12 minutes total. Transfer the hash mixture to a bowl and tent loosely.
- 4Slice the smoked sausage into thin half-moons. Return the skillet to medium heat, add the sausage, and cook until browned and sizzling with smoky edges, stirring occasionally so it renders and crisps.
- 5In a separate nonstick skillet over medium-low heat, melt the butter. Whisk the eggs with a splash of water, salt, pepper, garlic powder, minced chipotle, and adobo sauce until frothy.
- 6Pour the egg mixture into the buttered skillet and gently scramble, pushing soft curds from the edges toward the center until just set and still glossy—do not overcook. Fold in half the smoked cheddar off heat so it melts into the eggs.
- 7Warm the tortillas on a clean grill grate or dry skillet for 20 to 30 seconds per side until pliable and lightly toasted with faint grill marks. Keep them stacked under a clean towel.
- 8Assemble each burrito: lay a warm tortilla flat, spoon a line of potato-pepper hash down the center, top with scrambled eggs, browned sausage, remaining cheddar, and a drizzle of lime crema. Scatter cilantro.
- 9Fold in the sides, then roll tightly from the bottom up into a snug cylinder. For make-ahead hosting, wrap each burrito in foil.
- 10Optional finish: place foil-wrapped burritos on a medium grill or in a 375°F oven for 8 to 10 minutes to melt the cheese fully and crisp the exterior. Serve hot with extra crema and lime wedges for a backyard brunch spread.
