Ingredients

  • 2 cups peeled cubed butternut squash
  • 1 large diced Honeycrisp apple
  • 2 cups old-fashioned rolled oats
  • 3 cups whole milk
  • 1 cup water
  • 3 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1 tbsp olive oil
  • 1/4 cup toasted pepitas
  • 1 tsp fresh thyme leaves
  • 1 tsp lemon zest

Instructions

  1. 1Preheat the oven to 425°F and line a rimmed baking sheet with parchment. Toss the cubed squash and diced apple with olive oil, the salt, half the cinnamon, and the nutmeg until evenly coated.
  2. 2Spread the squash and apple in a single layer on the sheet. Roast for 18–22 minutes, stirring once halfway, until the squash is tender and caramelized at the edges and the apple is soft with golden spots.
  3. 3While the produce roasts, combine the oats, milk, water, remaining salt, and remaining cinnamon in a medium saucepan. Bring to a gentle simmer over medium heat, stirring often so the oats do not stick.
  4. 4Reduce heat to medium-low and cook the oatmeal for 8–10 minutes, stirring frequently, until thick, creamy, and the oats are tender but still have a little bite.
  5. 5Stir in most of the maple syrup and taste; adjust sweetness if needed. Keep the pot on low heat so it stays warm and spoonable.
  6. 6Remove the roasted squash and apple from the oven. Reserve a few pretty pieces for garnish, then fold the rest into the oatmeal so warm pockets of squash and apple are distributed throughout.
  7. 7Ladle the oatmeal into four bowls. Top each with the reserved roasted pieces, a sprinkle of toasted pepitas, fresh thyme leaves, and lemon zest.
  8. 8Drizzle the remaining maple syrup over the bowls just before serving. Serve immediately while the oatmeal is hot and the toppings still crunchy and bright.
