Ingredients

  • 1 1/2 cups pearled farro
  • 4 cups water or low-sodium vegetable broth
  • 1 tsp kosher salt
  • 2 medium, sliced ripe pears
  • 10 leaves fresh sage leaves
  • 3 Tbsp olive oil
  • 2 cups small-diced fresh pumpkin
  • 1, minced garlic clove
  • 3 cups baby spinach
  • 4 large eggs
  • 1/2 cup crumbled feta
  • 1/2 tsp black pepper
  • 1 tsp lemon zest
  • 1/4 cup toasted pumpkin seeds

Instructions

  1. 1Rinse the farro under cool water. Combine with water or broth and half the salt in a saucepan, bring to a boil, then simmer uncovered until the grains are tender with a pleasant chew, 20 to 25 minutes. Drain any excess liquid.
  2. 2Meanwhile, heat two tablespoons of olive oil in a large skillet over medium heat. Add the diced pumpkin and salt; sauté, stirring occasionally, until edges brown and the cubes are just tender, 10 to 12 minutes.
  3. 3Push the pumpkin to one side, add the remaining oil, and drop in the sage leaves. Fry until they crisp and darken slightly, about 45 seconds, then lift them out onto a paper towel.
  4. 4Add the minced garlic to the pan and cook 30 seconds until fragrant. Slide in the pear slices and cook 2 to 3 minutes so they soften and pick up a light golden edge without turning mushy.
  5. 5Wilt the spinach into the skillet just until collapsed, 1 minute. Fold the drained farro into the vegetables and pears, seasoning with black pepper and lemon zest.
  6. 6In a separate nonstick skillet, cook the eggs sunny-side up or over-easy over medium-low heat until the whites are set and the yolks remain runny, 3 to 4 minutes.
  7. 7Spoon the warm farro mixture into four shallow bowls. Nestle an egg on each portion.
  8. 8Scatter feta, the crisp sage leaves, and toasted pumpkin seeds over the top. Serve right away so the yolk can mingle with the grains.
