Ingredients
- 3 medium ripe Bartlett or Anjou pears
- 3 cups plain Greek yogurt
- 1 1/3 cups granola
- 1 tbsp finely grated fresh ginger
- 3 tbsp honey
- 1 tbsp fresh lemon juice
- 1/4 tsp ground cardamom
- 1/3 cup chopped toasted walnuts
- 8 fresh mint leaves
- 1 pinch of kosher salt
Instructions
- 1Wash and core the pears, then dice them into 1/2-inch pieces, leaving the skin on for color and texture. Place the diced pear in a medium bowl.
- 2Add the grated fresh ginger, lemon juice, half the honey, cardamom, and a tiny pinch of salt to the pears. Toss gently until every piece is coated and glossy; let the mixture sit 5 minutes so the flavors marry and the pears release a little juice.
- 3In a separate bowl, stir the remaining honey into the Greek yogurt until it is lightly sweetened and smooth. Taste and add a touch more honey only if your pears are very tart.
- 4Choose four clear glasses or jars so the layers show. Spoon a generous layer of the honeyed yogurt into the bottom of each glass, one-third of the yogurt total.
- 5Add a layer of the ginger-marinated pears, then a layer of granola for crunch. Repeat the yogurt and pear layers once more, finishing with a final sprinkle of granola.
- 6Top each parfait with the toasted walnuts and a couple of fresh mint leaves for a bright herbal finish.
- 7Serve immediately for maximum granola crunch, or cover and refrigerate up to 2 hours if prepping ahead—add the final granola and nuts just before eating so they stay crisp.
- 8The ginger and pear combination should taste bright, lightly spicy, and refreshing rather than heavy, perfect for a produce-forward November morning.
